Despite, or perhaps in some cases because of technological limitations, some older games had a very distinct sound that can be quite appealing. What NES (or master system) or SNES (or genesis) game had your favourite music?
For me, 8 bit is tough. I like Castlevania 3, but my top spot has to go to Crystalis. Even now the music from that inspires emotion from me.
For 16 bit, Breath of Fire narrowly beats out Final Fantasy 6.

Mega Man 2 is pretty hard to beat; heck, if you Google/YouTube something like "Top 10 Old School Video Game Music" or some such thing, you'll see a lot of inclusion of MM2, especially Wily Castle stage.
For SNES, Super Mario RPG and Donkey Kong Country 2: Diddy's Kong Quest both have a lot of amazing tracks.

No game that I can think of where I liked the entire soundtrack, at least not in th e8 and 16 bit realm... Final fantasy online is the game from which I like the most tracks by percentage, bu that's not an 8/16 bit game... I also really like 'a mediterannean call' which was sophitia's stage music in the original soul blade, but again. Wrong era...
I think for me when we're talking about 8 and 16 bit, its not a games worth of songs but individual songs I remember most. Other than everyone's perennial favorites of zelda and tetris and mario stufff I guess I'd have a few tunes that managed to make enough of an impression to stick in my head all these years...
Ikari Warriors. The prison theme from arcus odyssey. the theme song to Gauntlet, a few tracks from shinobi and ninja gaiden... The intro music to defender of the crown and centurion defender of rome were pretty good.

I personally like the soundtrack from Chrono Trigger, FF4, my favorite FF6, Super Castlevania, and the Legend of Zelda: A Link to the Past. I have used the soundtracks from Chrono Trigger, FF4, FF6, and Super Castlevania for background music for my pathfinder adventures. Now my sons, who are 4 and 6, want to hear the victory song from FF whenever we win a battle in our role playing games. A victory is not a victory without the victory theme from FF. They are cute when we win.

Megaman 2, so inspirational there are at least 2 bands that based their music off the franchise. The Megas and the Protomen, but also see Mega Ran.
Final Fantasy VI. Terra's theme is beautiful in every rendition. Dancing Mad is just the bomb diggity.
But I should point out that Mario Bros and Tetris are perfect earworms.

One of the first things I bought when I went to Chinatown for the first time ever was the Rockman X arrange soundtrack. The music is still beautiful to me. Get through the dark is still my theme song.
Also, it's not 16 bit, but I also got the king of fighters 94 soundtrack on my next trip. Equally beautiful.
I am interested in learning classical Spanish guitar so I can play laurence bloods arrange stage music from fatal fury.

Final Fantasy VI (Terra's Theme in particular) and Chrono Trigger have both been mentioned a bunch already and I'll second those heartily.
From the 16-bit era, the Sonic games, particularly Sonic 2 are also favorites of mine. Green Hills Zone and Chemical Zone are both still great in my ears.
As for 8-bit, The Legend of Zelda's bleepy bloopy music is music I still love.

8 bit for me: I love MM2. I think its one of the best soundtracks. However, for the sake of variety, I'm gonna pick the first Castlevania. I've used metal-ized versions of all the tracks in that game to highlight my Carrion Crown campaign. Nothing like a heavy metal rendition of 'Wicked Child' or 'Vampire Killer' to get the blood pumping.
For 16 bit, Final Fantasy and Super Castlevania are awesome, but I am a huge fan of Super Metroid. Not only is it a flawless game, but it has some of the creepiest music I've heard on a console. Play this track when describing Illmarsh and watch your character's sanity erode like a rotting sandbar into a hopeless sea.

8 Bit:
The Goonies II: https://www.youtube.com/watch?v=T0HOpjvhCOo
(The "Goonies R Good Enough" cover is kind of amazing, but the rest of the soundtrack is great too (slide past 4 min or so for the rest))

Especially the Eolis theme (at 0:47 in the link) and for some reason the Shopkeeper theme (4:44) and... well, pretty much all of it. Ah, nostalgia...

16 bit, ff6 hands down. I just started playing it again and realized how much I have missed the music and how it can still capture me at a much older age now.
8bit-I'm gonna be oddman out and say metroid. That music was so alien and gave off that vibe of being surrounded by the unknown that we the player can't understand.

All three of the Castlevania games from NES had some catchy music. Bloody Tears, the nighttime music from 2 has been remade for use in many of the later games (as of course has Vampire Slayer from 1).

Good point. I have that game, and it was a good game with a good sound track. Another game with a good soundtrack is Batman for the NES, and the Secret of Mana for the SNES. Actraiser has someawesome tracks for its levels as well. I do love Super Metroids levels, the title screen intro is a strong theme, serious, and foreboding.

I can't believe no one has mention Star Fox for SNES yet, it had some really epic music for some really epic dogfights.
For the same reason, I'd recommend Guardian Legend's soundtrack for NES. Epic music for epic dogfights.
I'd also second the Mega Man 2 (NES) and Zelda: A Link to the Past (SNES) recommendations.

Final Fantasy 5
Mega Man X, X2, X3
Secret of Evermore
Final Fantasy 4
Romancing Saga 1 and 2
StarFox
In that order, off the top of my head. These, and music like them, make up a good 70% (at least) of my regular listening. Heck, I'm listening to Halfont 2 music right now.

Since most of my choices have been mentioned (including Terranigma. Hats off to Orthos for that one), I'll go for what hasn't. Namely, freaking ACTRAISER.
