Hi, can anyone please advise whether any of the existing APs or one-off adventures deals with interacting with the Shoanti or Varisian traveller cultures? Two of the players are considering taking these ethnicities and wanted to know if there’s any official adventures that involve contact with that culture.

Curse of the Crimson Throne is what you're looking for, especially Edge of Anarchy and A History of Ashes. Each of those volumes has an article on one of those ethnicities, and the adventures in question deal heavily with those cultures. In addition, if you're looking for something to run, CotCT is considered one of Paizo's best Adventure Paths by many. (It might be a little railroady for your group here and there, though.)
Nothing else really compares to that for Varisians and Shoanti, unfortunately. ^_^
EDIT: Important note - it is technically a 3.5 (pre-Pathfinder) Path. The conversion is easy; I suspect you could even run it more-or-less unconverted, at least at first. If you need help with conversion, the forums here will aid you. I'll be there, anyway. ^_^

That all sounds ideal. I'm trying to encourage strong ties between race and class, so the player wants a scarf magus or hallow sorcerer. These sound ideal.
While the harrow bloodline is just fine, there are some issues with the kapenia dancer magus archetype as it advances - it trades away armor, but not a bunch of other things that rely on armor. (Compare it to the kensai.)

The Carrion Crown AP is set in the majority Varisian nation of Ustalav. Most of the populace gave up their nomadic ways when the Ustalav kings converted them from worshipping Desna to worshipping Pharasma, but a substantial minority still lives in family caravans.
The AP doesn’t place a lot of emphasis on Varisian culture, but it’s definitely there--there’s a freak show caravan, a lost Desnan holy site, a family of Szarni werewolves, and so on. Also, the AP is structured as a kind of road trip through different horror genres, so spinning it into a tale of the adventures of a Varisian caravan consisting of the PCs and perhaps a supporting cast would be relatively easy, and also add some cohesion to what some people feel can be a disjointed journey.
