Are trains ice chest friendly?
Depends on what's in the ice chest. Amtrak prohibits the consumption of personal alcohol in coach. If there's no alcohol, it depends on how genial the crew is and how full the train is.
They serve a limited but not godawful selection of beer, wine, and hard liquor in the snack car, though.

I'm seriously considering taking the Coast Starlight up from Central California to Seattle. It's a great trainride, and I've taken it up to Eugene Oregon several times back when I was in law school. And it's certainly cheaper than either flying or driving up when you factor gas, restaurants, and hotel expenses.

Are trains ice chest friendly?
Shouldn't be a problem if you're carrying it on (note there is a two-item-per-person limit).
There is room at each end of each car, though, where an ice chest would fit, and you'll have access to it during the trip.
I'd guess that if you want to check it, you'll need to make sure it latches or can otherwise close securely, and have nothing breakable in it. (They're not as bad as airplanes, but assume it's going to get dropped from a couple of feet and stored on its side or upside down.)
